Ingredients stuffed peppers
2 each pointed red peppers
1 packages mascarpone
1 tsp chopped chilli
1 tsp garlic finely chopped
1 juice of one lime
2 tbsp grated parmesan
1 tbsp chopped fresh chives
1 dash lea and perrins
how to make stuffed peppers
preheat oven to gas 7
cut peppers in half lengthwise and deseed
mix all other ingredients except parmesan and season
stuff peppers with mascarpone mix and top with grated parmesan
bake in foil for 15 minutes and a further 15 with foil open
serve as a starter with bread or light lunch with salad
