Ingredients quinoa stir fry
1 cup Quinoa
5 Button Mushrooms
1 1/2 cup Onion
1 1/2 cup Red Potato
1 tsp Olive Oil
1 pinch Curry Powder
1 dash Basil
1 dash Italian Seasoning

Soak quinoa for 20 minutes, then strain.
Add strained quinoa in pot to 1 cup water, bring to boil.
Cover and simmer 15 minutes.
Remove from heat, let sit 5 minutes.
Chop up mushrooms, onions and potatoes and place in frying pan with all listed spices.
Cook on medium heat until tender.
Spoon out quinoa onto plate, spoon out veggies onto quinoa, serve.
