Ingredients penne pasta with spicy tomato mozzarella sauce
2 tbsp Olive Oil
1 Onion (chopped)
3 clove Garlic (chopped)
1 Red chilli (de-seeded & chopped)
1 Tin chopped tomatoes
1 Splash Red Wine Vinegar
1 tbsp Tomato Puree
1 tsp Sugar
1 bunch Torn Basil Leaves
1 Salt
1 Ground Pepper
125 grams Mozzarella Ball crumbled
400 grams Dried penne pasta (cooked & drained)
1 Grated cheese to serve

Heat oil in saucepan (medium heat) and add onion and fry for 4-5 mins or until softened or beginning to colour
Add garlic & chilling and continue to fry for 1-2 mins
Pour in chopped toms, red wine vinegar, tomato puree, sugar & half of the basil leave and stir well
Bring the mixture to simmer, continue to simmer for 18-20 mins or until sauce has thickened & reduced.
Just before serving, stir in crumbled mozzarella & pasta, then spinkle over rest of basil & grated cheese.
