crustless spinach quiche

Ingredients crustless spinach quiche


1 tbsp Olive oil
1 small Onion chopped
10 oz Package frozen chopped spinach thawed & drained
1/4 tsp Salt
1 large Handful chopped mushrooms
2 1/2 cup Shredded cheese
6 Eggs beaten or
1 1/2 cup Egg whites

how to make crustless spinach quiche


Preheat oven to 350°F


Lightly grease 9 inch pan


heat oil in a large skillet over medium heat


add onions and cook, stirring occasionally, until onions or soft


stir in spinach and mushrooms and continue cooking until excess moisture has evaporated


in a large bowl, combine eggs, cheese, & salt


add spinach mixture and stir to blend


scoop into prepared pie pan


bake 30 minutes until eggs have set


Bake an extra 5 min. With whites only


let cool for 10 minutes before serving
