Ingredients crispy mashed potato cakes
2 large idaho potatos
3 oz cream cheese
2 tbsp sour cream
2 stock scallions
2 tsp lemon zest
1 egg
1 salt & pepper
1 tbsp extra- virgin olive oil
1 tbsp butter
how to make crispy mashed potato cakes
peel and dice potatoes
boil potatos in salted water till tender
drain potatoes and return to pot to dry
transfer potatoes to a bowl
soften cream cheese in a microwavable bowl for 20 sec.
add potatos, sour cream, soallions, lemon zest, eggs, salt & pepper then mash/mix together
heat oil and butter in a pan for over medium heat
drop 2-inchs mounds of potato into skillet and gently flat down
crisp potatoes untill golden brown on both sides, about 7 to 8 min. total
