Ingredients cowboy caviar


2 tbsp Red wine vinegar
2 tsp Olive oil
1 clove Garlic
1 1/2 tsp Hot pepper sauce (tabasco)
1 Fresh ground black pepper
1 Ripe avocado
15 oz Can black beans
15 oz can pinto beans
16 oz can corn
2/3 cup sliced green onion
1/2 cup chopped fresh cilantro
1/2 lb Roma tomatoes chopped salt to taste

how to make cowboy caviar


In a large bowl, combine vinegar, oil, hot sauce and pepper.


Peel pit and cut avocado into 1/2 inch cubes. Add to the vinegar mixture and toss lightly.


Drain and rinse beans and corn. add beans, corn, onion, cilantro, and tomatoes.


Mix gently to coat. Add salt and pepper to taste.


Serve with tortilla chips. It is also great as a relish with grilled chicken or steak.
