Ingredients cornmeal chicken with fresh peach salsa


5 medium peaches peeled and chopped (3 cups)
1 large tomato chopped (1 cup)
1/4 cup chopped fresh cilantro
3 tbsp vegetable oil
2 tbsp white vinegar
1/4 tsp salt
1/2 cup yellow cornmeal
1/2 tsp salt
1/4 tsp pepper
4 boneless skinless chicken breasts
2 tbsp vegetable oil

how to make cornmeal chicken with fresh peach salsa


In large bowl, mix all salsa ingredients. Cover and refrigerate until serving.


In shallow dish, mix cornmeal, salt and pepper. Coat chicken with cornmeal mixture.


In 10-in. skillet, heat oil over medium-high heat. Cook chicken in oil 15 to 20 min., turning once, until juices are clear. Serve with salsa.
