1 bunch zucchini
2 lb sausage
1 packages shredded cheese

Preheat oven to 350

wash and cut zucchini in half long ways making boats

place zucchini in oven until sausage is ready

brown 1 pound of sausage in skillet

remove zucchini and sausage from heat and let cool

remove inside of zucchini making empty shells

line fire roasted peppers inside zucchini shells

pack zucchini shells with browned sausage

add favorite seasoning. I suggest goya,carribean, salt, and pepper

Top the zucchini boats with shredded cheese

Cook in oven at 350 until all cheese melts
